Pineapple-Red Pepper Margarita

What to do with an over-ripe pineapple? Muddle it in to a margarita. In theory, anyway. In reality, it’s very hard to strain the drink with all that pineapple pulp plugging up the shaker holes. But no matter — it’s worth the effort.

The pineapple adds a touch of tropical sweetness, while the red pepper gives this twist on a margarita a savoury kick. It’s a nice mash-up of one of my favourite cocktails. Cheers!

Pineapple-Red Pepper Margarita

  • 4 pineapple chunks
  • 4 pieces red pepper
  • 2 oz tequila
  • .5 oz Cointreau
  • 1 barspoon agave syrup
  • 1 oz lime juice
  • Salted rim
  • Garnish: pineapple chunk and red pepper crescent

Method: Rim a margarita glass with salt, then fill with crushed ice. Muddle pineapple and red pepper in the base of a cocktail shaker. Add tequila, Cointreau, agave syrup and lime juice plus ice and shake. Strain into the margarita glass and garnish with a pineapple wedge and red pepper crescent.

Bitter Salty Perro

I have been craving grapefruits this winter. I love their colour and bitter-sweet taste, and I love that they seem like a special treat since we purchase them so infrequently. So I was pleased when Blake somehow read my mind and brought home five from the store. We gobbled down two, which left three for cocktails.

But what to make? Blake Googled “grapefruit cocktails” and came up with a selection that work this time of year. Since I can’t always turn everything into a margarita or some kind of sour, I opted for the Bitter Salty Perro. It’s supposed to be a twist on a drink called a Salty Dog (‘perro’ means dog in Spanish), which is gin and grapefruit juice with a salted rim. But I think it has more in common with the tequila-based Paloma, using tonic instead of soda, and a healthy dose of bitters. Bonus: we had all the ingredients on hand.

I love how well grapefruit juice and tequila go together. I was worried the drink would be too bitter, but grapefruits are actually sweeter than limes, and tonic water has a lot more sugar than most people realize. Everything together makes this Bitter Salty Perro just sweet enough to want to drink again.

Bitter Salty Perro

  • 2 oz fresh-squeezed grapefruit juice
  • 1 oz blanco tequila (I used Casamigos)
  • 2 dashes Angostura bitters
  • Top tonic water (about 2 oz)
  • Salted rim
  • Half grapefruit wheel garnish

Method: Rim a rocks glass with salt and then fill with ice. Combine grapefruit juice, tequila and bitters in a cocktail shaker with ice, shake, then strain into the rocks glass. Top with tonic and garnish with a half grapefruit wheel.

Drink of the Week: Tiki-la Zombie

Both tiki drinks and zombies have been, um, on the brain lately. Tiki cocktails because I’m writing about their resurgence in my Calgary Herald column next week; zombies because season 5 of The Walking Dead just started (also, zombies have taken over our neighbourhood in the run up to Oct. 31). So, today being Halloween and all, I thought I would combine the two forces. Behold: a tiki zombie cocktail made with tequila (not rum). Hence the name.

Really, this drink is just a glorified tequila sunrise (it’s actually tastier than that, with bonus lime and mint, and agave syrup instead of grenadine). I chose it because it came up as a “Day of the Dead” cocktail in a Google search and it’s the right colour (orange). Oddly, it didn’t have a name, but when I put it in the awesome $1.50 Dollarama skeleton mug and added the garnish, it took on the appearance of a tequila tiki drink. So, Tiki-la Zombie.

Tiki-la Zombie

  • 2 oz Cazadores tequila
  • 2 oz blood orange juice
  • 1/2 oz lime juice
  • 1/2 oz agave syrup
  • 8 mint leaves

Method: Combine ingredients in a cocktail shaker, shake with ice and then strain into a skeleton mug. Garnish with a mint sprig atop an orange wheel.
